What a clever, economical and long overdue innovation. The restaurant and catering industries have a huge waste factor, often due to food safety issues. I hate to see food thrown out when there is so much hunger and poor nutritional habits here and abroad, but at least it is being converted into a safe, useful product that stays out of landfills. Let's hope residential waste is soon to follow!

This is even one step beyond what my city does. Here the city just composts yard waste which is mainly grass clippings and leaves in the fall. They also pick up brush and tree branches up to three inches across. This is turned into mulch for flower and shrub beds. It's all sold back to landscapers and the public at a very reasonalbe price.
