Your soup sounds great, David. I tried lemon grass, ginger, star anise and line juice for the stock. Yum.

I too boil the turkey bones into turkey soup stock. With the addition of a few vegetables like carrots, celery, corn, peas, home made noodles, the soup can last for weeks after Thanksgiving. I bag it up in Ziploc bags and freeze it so I can still be remembering Thanksgiving day in the middle of February.

Great ideas! My favorite, though, is the classic turkey sandwich with mayo and cranberry sauce.
