My Louisiana friend always served us potato salad with her gumbo, and yep, we dumped it right in the bowl with the soup. Now I can't imagine eating it any other way! I love gumbo but haven't had a really good version in a restaurant up here in the northeast.

Judy, I'm sure all your substitutions for Jambalya will be delicieu. My experience with Jambalaya is that every southern family has their own recipe for Jambalaya. It's kind of like Chili recipes. There are hundreds of different ways to make Jamalaya and Chili. None are wrong. Judy, with your food creativeness, I suspect it will be a culinary delight for sure.
