A zucchini boat consists of splitting the zucchini lengthwise and cooking just enough to soften the zucchini. Then scoop out some of the flesh and mix it with similar things as in the squash recipe in this post. Then cook it until the squash is soft and cheese is melted. Awww, it's so good.

Judy, Now you are talking my kind of food. Stuffed squash. Yum yum. My late wife was the master of the Zucchini boat as she called it. She never used a recipe and it never was the same but it always was delicious. It doesn't seem to be extremely difficult and I don't know why I haven't tried to make it myself. You have now sparked my taste buds and I'll be on the hunt for squash in my next shopping trip.
