I dropped by because I didn't know how much salt to veggie ratio I should use to extract the moisture. I have a recipe for mustard pickles and the veggies: cauliflower, cucumbers, pearl onions, green tomatoes and peppers are first to be sprinkled with salt... no mention as to how much. Your article didn't give me an idea of how much either. I guess I'll continue to search. But I learned a lot from your discussion of the types of pickle processing.
