I always thought Chicory was strong flavored drink from the deep south in the states that was similar to coffee. This sounds more like a salad item.

I too am confused by the various names applied to chicory plants. I planted something labeled "Cichorium intybus: Italian dandelion" that produced lots of green leaves without the white stems. (Perhaps your photo shows the blanched/forced plants.) I like sauteed bitter greens, so I used them that way, but I'd like to do more with them. My plan was to harvest the new shoots this spring and then start over with a new bunch of seedlings. Perhaps I'll force a few of those next winter!
