Comments On - A Healthier Side Dish

Good point, Lea. ANd the dish works fine without the bacon. I was focused on the cream & cheese of the traditional dish and I used a local farmer's heritage breed bacon.

Seriously, to make a healthier side dish you used bacon? I've never had potatoes au gratin with bacon in it. It may be the way some folks traditionally eat it but if the idea is to alter it for the purpose of making it healthier, that would be the first thing I would omit.
