The Russet Burbank potato is what Idaho is known for. This potato is commonly used at fast-food restaurants for French fries, but because of the higher sugar content, it's great for simply baking and topping off with butter.

Size: 4 to 6 inches long.

Sunlight requirements: Full sun.

Water requirements: Water evenly to avoid misshapen crops; 1 to 1 1/2 inches of water per week.

Soil requirements: Loose, well-drained, slightly acid.

When to plant: Late March or early April.

Where to plant: Plant pieces between 10 to 12 inches apart; space rows between 24 and 36 inches apart.

When to harvest: About 15 days after foliage turns yellow.

Product storage: Store in a cool, humid place, such as a basement or garage; will keep over winter at 40 degrees Fahrenheit.
